Ingredients

  • 2 cups mixed greens
  • 1 cucumber, diced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cucumber, bell pepper, cherry tomatoes, and red onion.
  2. Sprinkle the feta cheese and Kalamata olives over the vegetables.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for up to 30 minutes to allow the flavors to meld.
